Meals and Snacks
At Wellspring Family Camp, you won’t be hungry and will never be bored with our healthy and flavorful menu. You’ll have a variety of delicious entrees and uncontrolled (unlimited) foods at every meal.

Wellspring’s diet management program is unique. After you experience it, you’ll ask: “Why doesn’t everyone do it this way?” Typical diet camps provide restricted amounts of a wide variety of foods, like pizzas the size of a small pancake for dinner and tiny sandwiches for lunch. While we do provide limited amounts of entrees at meals, at Wellspring there are unlimited amounts of uncontrolled foods. Our cooks provide appealing uncontrolled foods at every meal: fat-free yogurts of different flavors, tasty fruits, fresh vegetables, homemade soups, fat-free tuna and egg salads, fat-free cottage cheese, and more. Parents and campers learn that they can be healthy and eat until they feel satisfied. The secret is not really a secret after all: by eating certain types of foods and making sure to keep them interesting and tasty, no one will feel deprived or hungry at Wellspring.
Typically, breakfasts and lunches will be simpler, as we’re moving quickly to get on with the activities of the day.
A typical Wellspring breakfast might be:
- Hot Apple Spice Oatmeal
- Toasted bagel with fat-free cream cheese and sliced tomatoes
- Selection of cereals
- Variety of fat-free yogurts and fresh fruit
A typical Wellspring lunch might be a picnic served outside, at the Pinehurst Beach Club:
- Turkey sandwich on wholegrain bread
- Black bean and hummus wrap with lettuce and tomato
- Peanut Wonder and Jelly Sandwich
- Selection of cut vegetables
For dinner, we pause to enjoy Pinehurst’s remarkable hospitality and cuisine, with a menu prepared especially for Wellspring – low calorie-density, and low-fat
- Roasted filet of cod with lemon sauce, shallot and herb roasted vegetables
- Marinated breast of free range chicken with lemon, garlic and cumin, red bean, mango & rice timbale, green beans and button mushrooms
- Grilled scaloppini of Atlantic Salmon with sauce Foyot
- Complete salad bar with variety of fresh, seasonal lettuces, vegetables and fat-free dressings
- Complete fruit and yogurt bar
At least once during your time at Family Camp, you will work with our culinary instructor to prepare dinner in a Pinehurst kitchen so that you and your children are trained to continue the Welllspring program at home.
In the afternoon and again in the evening we enjoy a snack – in the afternoon, we sometimes enjoy tea with our snack
- Fat Free cheese and crackers
- Low Fat Popcorn
- Pretzels and Salsa
- Veggies and Fat Free Dressings
- Fruit Salad
- Fat Free Brownies
- Fat Free Smores
- Homemade Apple Cinnamon Bread
